Its time for warming nourishing food. Soups are good for the budget and they are just what you need on a winters day. This is a simple soup that you can freeze in to 1 or 2 portion sizes and just grab when needed.
Makes 2 servings:
2 tps of coconut oil
½ pumpkin chopped into small cube size
2 seaweed strips (kumba)
4 cloves of garlic crushed1 onion sliced
1 tsp of curry powder
½ tsp of garam masala
1 stick of cinnamon
1 litre of vegetable stock
2 cup of water
1 can of coconut milk
Salt and pepper to taste.
Handful of fresh flat leaf parsley or coriander finely chopped
Heat up a pot, add coconut oil. Add pumpkin, garlic and onion, add spices and sauté all of the above ingredients for 5 mins. Cover with the stock, 1 can of coconut milk and 2 cups of water.
Bring to the boil and then let simmer for 40 mins. When cooked put in
blender and whiz for a creamy smooth consistency then add some
lemon zest and juice of the half lemon. Season with finely chopped
herbs, salt and pepper to taste
